The 27th edition of our gastronomic evening L’ENVOL…all in music! will take place at the Centre de Foires de Sherbrooke, on Wednesday, April 23rd, under the honorary presidency of Sylvain Gilbert, Vice-President regional and Partner – CPA, M. Fisc. of Raymond Chabot Grant Thornton.

This event is a major fundraising activity for La Maison Aube-Lumière.

On the program: a musical cocktail from 5 pm, followed by an excellent gastronomic 6-course dinner imagined by chef Dominic Tremblay of the Espace Traiteur at Café Massawippi.
Menu of the evening
- Appetizer : During the musical cocktail, various bites
- Starter: Trout fillet of the Ferme Piscicole des Bobines with compressed melons
- Hot soup: Butternut squash velouté with Indian filling
- Main meal: Canard (duck) du Lac Brôme with blueberry gastric sauce with garlic-flower potatoes and vegetables
- Cheese taste: Fromage Champayeur from the Fromagerie du Presbytère with pretzels and sunflower seeds with cranberry salsa
- Dessert: Dark chocolate with raspberry compote
This year, tables will be larger to accommodate 10 people. The cost for an individual ticket is 225$ (income tax receipt of $100) and the purchase of a table for 10 people is 2 000$ (income tax receipt of $750).
To close the evening from 9:30 pm to 11:00 pm, you will dance with the Sherbrooke band Silk & Stone.
Our VIRTUAL AUCTION will be online from April 16th to 23rd, 2025. The link will be available on our website and Facebook page from 10:00 AM on April 16th to bet on our fabulous prizes.
